Sault Département 84

Here, Provence gets higher, raised by the thrust of the Alps. It is not yet a mountain, but the hills have raised themselves to a plateau. Everything here is serene and green; you will find lime-trees, almond trees, green oaks and beech. In this preserved environment, fauna is protected and plentiful. Sault is one of 6 French UNESCO world heritage sites, and was labelled by the French Ministry of Environment. The village overlooks the Gorges de La Nesque, and faces Mont Ventoux. In the summer, the mauve colour of blooming lavender forms a very harmonious landscape with the yellow Einkorn wheat.
This area has an interesting history: the Roman church Notre Dame de la Tour; the museum of Sault, where you will see collections of pre-historic, Gallo-Roman and medieval items; the Maison de l’Environnement et de la Chasse (the House of Environment and Hunting); the Center for the Discovery of Nature and the Lavender Gardens.
And do not leave Sault before tasting its nougats, macaroons and lavender honey, all of them guaranteed to be 100% natural and 100% delicious!
