- The Hotel-Dieu hospital and its superb 18th century pharmacy.
- 17th and 18th century townhouses bearing beautiful doors and balconies, restored to the purest provencal tradition.
- A beautiful synagogue, built in 1367 and restored in 1954, with baths and pools observing the Hebraic rites. Carpentras was the home of one of the largest Jewish colonies in Provence.
- The 18th century aqueduct, 623 meters long and 23 meters wide.
- The Collegiate church Notre Dame des Anges
- The Saint Siffren cathedral, built between 1405 and 1519 in Southerner gothic style. Saint Siffren is the patron saint of the town.

Lovers of sweets will be delighted to enjoy Carpentras’ gastronomic specialities: candied fruits, strawberry, cantaloupe melon, berlingot candy, and the truffle market.
